Job Description
KEY OBJECTIVES:
- Product: Strong knowledge of all products, quality, sourcing and supply. Delivering exceptional standards in line with the ethos of the brand.
- Guest Experience: Lead the kitchen to deliver quality products and run smooth service meeting guest demand.
- People: A key role in training and development of Back of House team, and day to day people management.
- Operations: Maintain all Food Safety, Health and Safety, administrative and statutory duties.
- Financial Responsibility: Delivering against all financial targets, such as sales, labour and stock management.
PRODUCT:
- Working with HC/SC to develop and create innovative dishes. Supporting the BOH team to implement and deliver new dishes whilst maintaining exceptional standards in line with the ethos of the brand.
- Monitor and evaluate product quality and consistency to ensure quality of products and dishes and constructively communicate improvements where necessary.
- Strong knowledge of seasonality, produce and suppliers to ensure high-quality ingredient selection.
- Maintain good supplier relationships and in-depth knowledge of our suppliers and producers
- Carry out daily check to ensure product quality and consistency to guarantee the excellence of all dishes.
- Deliver high standards of food preparation and presentation to consistently deliver the guest experience.
GUEST EXPERIENCE:
- Take a hands-on approach, overseeing all sections and the pass, ensuring smooth running of the kitchen throughout.
- Participate in shift briefs to develop product knowledge of Front and back and house.
- Participating on post shift briefs to address any issues.
- Ensure BOH line team are fully trained in counter service and always uphold service standards.
- Work in partnership with the front of house team to enhance Guest Experience, using feedback reports to shape team training and development needs.
PEOPLE:
- Lead the team by example, cultivating a positive work environment by demonstrating professionalism, integrity, and a strong work ethic.
- Ensure full participation in training and development opportunities to ensure skills and knowledge development.
- Good working knowledge of all HR processes and procedures including effective performance management to build staff retention.
- Support BOH compliance training and adhere to all relevant health & safety, food safety and COSHH policies, procedures and practices
- Take an active role in on-boarding and training for the Back of house team. Identifying key team members for development and succession.
OPERATIONS:
- Ensure all administrative and statutory elements required are executed to an exceptional standard, ensuring full site compliance.
- Maintaining food safety standards, and legislative requirements to maintain a 5* EHO rating.
- Support on weekly stock count procedures, analyzing margins, sales mix, wastage reporting. Investigating and resolving any discrepancies.
- Reporting any site issues or maintenance concerns promptly.
Ensure all daily, weekly checklists are completed and all SOPs are adhered to.
Job Requirements
- Minimum two years in busy restaurants in London.
- Managerial experience.
