About Singburi

Singburi, means “Town of Lions”. It’s a small town just outside of Bangkok in central Thailand and is where Siri’s dad comes from.

In 1999 the original Singburi opened in Leytonstone, where it was open for 25 Years. Siri was 16 at the time and started working in the family restaurant doing a bit of everything, both back and front of house working alongside his parents. 

In 2003 Siri stepped fully into the kitchen, working much more closely with his dad and starting to take a creative lead on the menu. They worked side by side for 20 years, creating the classic Singburi dishes. A firm favourite on the London industry food scene their following grew, and Singburi was recognised by the National Restaurant Awards in 2023. Joining the list at 73 and moving up to 71 in 2024. 

In 2023, with the challenge of rising rents and growing older, Siri’s parents started to think about retirement – marking the end of the OG site which closed in November 2024. You will notice the sign has come along with us. 

Now

Since moving to London in 2001 Nick has built a wealth of experience behind him in some of London's best loved restaurants. The founding HC at Kiln, working with JKS on multiple projects, including Speedboat and Plaza and developing Oma alongside David Carter, Nick was ready for his own project. As long-term friends and collaborators, Nick approached Siri with a plan to reimagine the restaurant for a new chapter building on their experiences to evolve Singburi in a new location.  Joined by good friend Alexander, founder of café-come-roastery Catalyst and the punchy sauce brand Koffiracha Alex was ready for a new challenge and wanted to make the switch to Restaurants. Shaping his natural hosting skills to lead the front of house team – here Grecothai was formed. 

This next phase of Singburi is about bringing the spirit of Bangkok and the original Leytonstone site into the city.  We are a casual restaurant with no airs or graces. It’s an open kitchen; the counter is for walk ins, where you might strike up a random conversation with the person next to you or while away the evening trying our dishes and wine list. 

 

Our food

Thai food that is not regionally focused bringing influences from across the country. When you look at Bangkok, it’s a city filled with diverse cultures and communities. Thai cooking uses many influences from the region. 

At its heart, our menu is an evolution of the Singburi blackboard menu, and a reflection of what we love to eat and cook. Thai food is served in a Samrub style, dishes all served together family style, combined on the menu to complement each other. Something hot needs something bitter, which needs something sweet, which pulls you back to something sour… and before you know it, your glass is empty again. That’s how we want the experience for our guest to flow with rhythm, curiosity and joy.
