Job Description

Working in partnership with the Head Chef, the role of the General Manager is to lead all aspects of running Elsa, a Bib Gourmand-awarded French German bistro in Fitzrovia. The General Manager is the senior operational leader of the business, responsible for driving revenue, controlling costs, and maintaining the culture, team, and guest experience that set Elsa apart. This role demands equal parts strategic thinking and hands-on execution; someone who can read a P&L as fluently as they can read a wine list, and who takes genuine pride in the standards we've built.

Job Requirements

Commercial leadership. You're comfortable with P&L analysis, labour cost management, GP tracking, and financial modelling. You benchmark suppliers, negotiate procurement contracts, and oversee stock tightly across food and beverage. You identify what's driving or dragging performance and act on it. 5+ years in senior restaurant management, at least 2 as GM.
Wine & beverage. You're a genuine wine lover. Curious, engaged, and active within the natural wine and hospitality community. With our house sommelier, you will lead the development of the wine list, manage supplier relationships, and train the team to sell and serve with confidence.
Service standards. We go above and beyond for our guests. You will lead the FOH team with enthusiasm to maintain excellent service, both on and off the floor.
Relationship building. You're socially at ease across the industry: with hotel concierges, press, wine producers, and peers. You use those relationships to drive footfall, grow covers, and keep Elsa front of mind in London's restaurant scene.
