Own the full P&L and drive consistent, profitable growth across restaurant, bar, and events
Lead from the floor: set the tone for high-energy, detail-driven service every shift
Build and maintain a culture that feels sharp, warm and unmistakably LARDO
Deliver standout guest experiences that balance precision with spontaneity
Take full accountability for team performance, hiring, training and retention
Work closely with kitchen leadership to ensure food, service and pace are in sync
Develop revenue streams across events, private dining and collaborations
Maintain rigorous control of costs, stock, rota efficiency and cash management
Curate atmosphere: music, lighting, flow every detail matters

Proven GM or senior leadership experience in a high-performing independent restaurant
Strong commercial instinct with a track record of hitting targets and managing margins
Deep understanding of service - how to read a room, fix problems and elevate
Confidence with wine and drinks - lead and inspire a knowledgeable team
Natural leadership presence. - decisive, calm under pressure and respected on the floor
Obsession with detail without losing pace
