Job Description

The Forza Wine mothership seeks a new captain. Our current Head Chef is off to the seaside to open his own business after a 4 year tenure. 

This is the original Forza Wine, the birthplace of so many ideas, recipes and ways of working that have created a foundation for the success our National Theatre and Soho venues. We've been in Peckham for a while now, our clientele get what we're about and we've got regulars and new customers alike always leaving well fed and watered. 

The Peckham kitchen is held in high regard across the group, it benefits from one of the best pass views in London (possibly the world?!) an excellent wood fired grill that holds so many possibilities as well as all the usual bells and whistles. It's also the only site that runs rotating house-made sourdough flatbreads, a great format for experimentation and expression. 

Our 10 (ish) dish menu rotates with the seasons and at the whim of the kitchen team, as long as it's delicious and Italian (ish) it's your canvas to paint as you see fit. GP's and accessible pricing in mind of course!

We've got a full team of excited passionate cooks ready and waiting for someone to harness their potential.

Qualities

We take our workplace culture very seriously, we even won an award. As such, the desire to work in a business that looks after its people with diligence, empathy and as much love as is professionally appropriate, is really important. We create worthwhile long-term development plans for our teams so an avid interest in the success of the people around you is really crucial. 

We're not saving lives here, yes the oven might break at peak service, you might get a table of a million dietary requirements and that one order you really needed still hasn't turned up - but we're just cooking people's dinner. If the aforementioned wouldn't phase you and you'd keep a calm head throughout, then that's the kind of attitude we look for. 

It might make you cringe, but let's be honest the best ingredient in any dish is love. Any Head Chef worth their salt can tell when they're eating something that's not been cared for, if you cook with passion and for the love of the game we're the place for you.

Experience

We love working with seasonal produce and chop and change the menu as we see fit in line with this, so previous experience with both the knowledge required to prepare and execute dishes, as well as the crucial organisation that allows our teams to deliver the menu at it's best is key.

Of course previous Head Chef experience is going to be very useful! But if you've run a good size team as a bona fide second in command to a Head Chef and are looking for your chance to collate your experience to date and do it your own way, absolutely get in touch. 

Last but not least, we are Italian (ish), so a good catalogue of western European experience is going to be the cornerstone of stepping into this position.

There's so much creative scope here, not just on the menu specifically, but in the way we operate, who we work with and the broader picture of the site itself. We're an independent business, owned by two directors who are in it and live it every day, as such we make decisions for ourselves as we see fit.
