Job Description

FORNO is looking for a Head Baker to lead our production team and take ownership of everything that comes out of our Hackney bakery.

We're a growing bakery with three sites and a strong wholesale operation, and we're expanding, new production space and new locations are already in the works. This is a pivotal role for us: someone who can hold the standard we've built, bring genuine leadership to a small team, and grow alongside the business.

You'll be based at our main Forno site in Hackney, overseeing daily production for our retail locations and wholesale customers, with room to shape how we operate as we scale.

What you'll be doing:

Leading and managing a small team of bakers: rotas, performance, culture
Overseeing daily production across pastry and wholesale output
Maintaining the quality and consistency of our current menu
Identifying and implementing efficiencies in our bakery setup
Handling stock ordering and inventory management
Building and maintaining relationships with suppliers: current and prospective
Collaborating with our chefs on recipe development and future menu direction
Managing wholesale customer relationships and ensuring their needs are met
Working with drivers and couriers to coordinate timely delivery of wholesale orders

Job Requirements

Minimum 2 years' experience in a professional bakery, ideally in a senior or leadership role
Strong technical knowledge across bread and/or viennoiserie
Someone ready to step into or grow into a genuine leadership position
Organised, reliable and comfortable managing a team and a busy production schedule
Collaborative by nature, with a passion for quality ingredients and great product
Excited by the idea of being part of a business that's actively expanding
