Browns of Brockley are looking to hire a new Head Baker for our in-house bakery.

While our first shop was established in 2009, we have been making all our bread and viennoiserie in-house since 2022. We have three coffee shops in South-East London which are supplied by our bakery which is located in Forest Hill SE23. We are on the lookout for someone to lead this bakery operation. For this role you will be in charge of a team of 5, producing sourdough breads, viennoiserie and other assorted bakes to our 3 shops and a couple of wholesale customers.

We are looking for someone with great experience in both bread and viennoiserie, who loves food and drink. Someone who is happy to carry on our core range while putting their own mark on our bakery. We do almost no wholesale, have no outside investors; our focus is on quality, consistency and slow, organic growth within our group of shops.

The vast majority of equipment is new. We use good suppliers like Stoates, Shipton, Natoora, Shrub, Estate Dairy etc. We cook and eat lunch together each day and in general try to make it an enjoyable place to be.

We are open 7 days a week, so full availability is a must. With the size of our team it means most people are only doing one early morning bake a week, otherwise shifts are mostly 7am–3pm. Our ideal candidate lives locally, with an easy commute in.

Duties:

Lead your team on a daily basis, along with weekly meetings, quarterly all-staff meetings and one-to-ones
Maintain a clean, organised and efficient workplace
Oversee daily production, quality control and season forecasting
All ordering, stock rotation, working with suppliers
Working with shop managers to understand overall business, and how bakery products sell in our shops
Interview, onboard and train all new staff
