We're now looking for a chocolatier to take our filled chocolates somewhere new.

Why this job is different

Most chocolatiers work with couverture someone else made. You cut open a bag and get what you’re given, At chocolarder we want to explore the incredible complex world of chocolate and look forward to exploring how it can translate to filled chocolates too.

As well as getting to work with amazing chocolate, you will have the freedom to develop the range rather than execute someone else's recipe book. We want somebody with ideas about where our filled chocolates should go, and the discipline to take those ideas from a trial to a costed, scalable, shelf-stable product that sells.

More on the role

Leading NPD across our filled range and white label work, from concept through to launch, with an eye on scalability from day one. Running production of filled products to consistent quality and to schedule. 

Keeping the production space audit-ready under HACCP and to SALSA standards, including batch records, cleaning schedules and daily set-up and set-down checks. 

Working with the production manager on planning, and with the marketing and sales team to keep the NPD pipeline on track.

You'll also be working with the wider team on bars, truffles, drinking chocolate and dragées, get to know the machinery well enough to troubleshoot it, and have the opportunity to represent us at trade shows and events.

Who we are 

Chocolarder is one of a small but growing number of chocolate makers in the UK making chocolate from scratch. Sacks of cacao come in from farmers from across the world, and everything that happens after that — roasting, winnowing, grinding, conching, tempering — happens under our roof in Falmouth to the highest standards. Since 2012 we've been building a reputation as one of the finest craft chocolate makers in the UK, and have received world wide recognition to this end.

The team and the place

We're small, we're busy, and we care a lot about what we do. You'd be based at our production sites on Tregoniggie and Church View estates, ten minutes from the sea. You will be able to see your chocolate work being sold in our shop on the Falmouth high street in town.

What you'll be doing

Primary

  • Overseeing the punctual and precise manufacturing of all filled Chocolarder and white label products, with particular focus on quality control and monitoring.
  • NPD, with good time management and being aware of scalability issues going from small to larger batches.
  • Complying with SALSA and HACCP requirements
  • Ensuring all relevant paperwork regarding batch production and cleaning schedules are maintained.
  • Perform daily set up and set down checks in line with food safety procedures
  • Communicating regularly with the production manager in scheduled weekly meetings.
  • Working closely with management, marketing and sales teams to ensure a smooth transition from concept to launch of new chocolates.
  • Maintaining clear and concise communication with all departments regarding the purchasing of ingredients, troubleshooting, delays and launch of new lines

Secondary

  • Assisting the team with production of existing products including but not limited to chocolate bars, truffles, drinking chocolate, dragées.
  • Learning and maintaining a base understanding of troubleshooting and fixing issues with machinery.
  • Planning for continuous improvement of the production space.
  • Represent the brand at external and trade events.

Job Requirements

Who we're looking for

  • A food professional with at least two/three years working professionally with chocolate
  • Confident with tempering, ganache and enrobing or moulding at production volume
  • Commercially minded in a practical sense: you think about yield, waste, costings and margin, as well as flavour
  • Organised with paperwork
  • Comfortable in a small team where everyone does a bit of everything

Experience with HACCP, shelf-life and water activity work, or scaling recipes from kitchen to production is a real advantage.
