The Role

We’re looking for a Restaurant General Manager who can bring both passion and structure to our fast-growing business. Since we launched our Borough Market Residency in November 2025, Barang has become one of the most talked about restaurants in London. Glowing reviews from Joel Golby (Observer), David Ellis (London Evening Standard) have seen us now rated as one of the capital's most exciting new dining experiences. 

PLEASE NOTE THIS IS FOR AN IMMEDIATE START, WITH A FIXED TERM CONTRACT AVAILABLE UNTIL 28 JUNE 2026.

This is not a traditional GM role; it’s hands-on, creative, and entrepreneurial — suited to someone who thrives in dynamic, collaborative environments and who shares our love for food, people and culture.

You’ll lead the day-to-day running of our restaurant floor at our Borough Market Residency (and ideally beyond) — ensuring service runs seamlessly, guests feel genuinely cared for, and every experience reflects our values of diversity, authenticity, and craft.

Beyond the residency, we're looking to transition straight into our permanent central London site. Ultimately we're ideally looking for someone who sees this as a long-term project, with this role being one that will grow rapidly within the business. We are of course happy to consider applicants who are interested in just the , but we also are very keen to hear from those who would like to build something special with us long term.

Key Responsibilities

Oversee daily operations at the Borough Market site — from setup to service to close.

Build and manage a motivated team, fostering a culture of respect, collaboration, and hospitality.

Work closely with the Head Chef / Founder to maintain consistent quality and guest experience.

Lead on guest relations, ensuring every service feels personal, warm, and memorable.

Manage bookings, budgets, staffing, and supplier relationships with attention to detail. 

Uphold Barang’s core values — diversity, integrity, craft, community, and progression — in every aspect of the role.

Job Requirements

About You

You have strong hospitality management experience, ideally within a fast paced restaurant environment.

You’re hands-on, organised, and calm under pressure, with great communication, attention to detail and people skills.

You share a passion for Southeast Asian cuisine, open-fire cooking, great wine, and storytelling through food & drink. 

You’re naturally inclusive and community-minded, and enjoy building diverse, supportive teams.

You’re commercially aware but driven by purpose — understanding how great operations and values-led culture go hand in hand.
