At St. JOHN our pudding list occupies a section of the menu at least as long as the preceding courses. "Puddings are vital" says Fergus Henderson, legendary chef-owner of St. JOHN. Far from a grudging afterthought puddings are fundamental to your meal. Because of this the pudding list is printed onto the main menu - the convention of the separate dessert menu puts you at a disadvantage: imagine being too full for Steamed Syrup Sponge! A tragic end to lunch. 

Pudding is the diner's final memory so it must be one of our first thoughts. Our puddings do not hide behind quenelles and drizzles - we see strength in clarity. A pudding should be a celebration of itself.

As a pastry chef at St. JOHN, you will be in charge of a list focused on a range of steadying classics beautifully executed. You will be excited and inspired by the purpose and deceptive simplicity in which we work and have a passion for cooking seasonal local produce, to delight our new old and regular customers in an iconic adored establishment, which draws locals as much as those who make pilgrimages from America, China and more. 

We are happy to consider Chefs from all backgrounds, as we will provide training and development in the St. JOHN way of cooking, but we do definitely need some experience (see below).

Job Requirements

  • Previous experience as a Chef with some pastry experience too. Has some supervisory experience in managing and leading a section and enjoys working in a tight knit team.
  • Has a genuine passion for classic British, French and Italian cooking and desserts, and shows respect and simplicity from produce to plate.
  • An engaging, energetic and positive outlook and is a strong team player.
  • Kind friendly and welcoming - someone who is happy to be hands on in the kitchen and support all the team.
  • Has a good level of English Language skills and the ability to build rapport with all.
