OMA + AGORA opened in April 2024 in the heart of London’s thriving Borough Market. Two restaurants in one building, OMA is inspired by the fishing villages and shores of the Greek isles and further Levant, while AGORA is inspired by the energy of Athens’ markets and streets.

About the role. 


 

We are looking for an experienced dough maker to join our bakery team. Working closely with our Head Baker and consultants, you’ll play a key role in producing and refining our doughs for breads and pastries, supporting the growth and consistency of our production. 

This is an early start / early finish role, with night or early morning hours expected. 

You’ll have hands-on experience in dough production within a fast-paced bakery or kitchen environment and take genuine pride in the quality of what you produce. You’ll be cooking in a kitchen that cares about the food it sends out and be working with amazing, fresh produce from some of the best suppliers in the country alongside a well-established and tight-knit team.  
 

Responsibilities.

  • Lead and manage the bakery team operating across both day and night shifts
  • Oversee daily bakery production, ensuring quality, consistency and availability across all services
  • Plan production schedules and organise the team effectively according to business needs
  • Prepare, mix and develop doughs for breads and pastries to specification
  • Monitor fermentation, proving, baking and overall product quality to ensure consistent standards
  • Maintain and develop recipes, specifications and production processes
  • Manage ordering, stock levels, wastage and bakery-related costs
  • Ensure bakery equipment is operated correctly, maintained and any issues are reported promptly
  • Train, develop and support bakers, ensuring clear standards and accountability within the team
  • Ensure all food safety, hygiene and HACCP procedures are followed and maintained at all times
  • Work closely with the Head Chef and wider kitchen management team on menu development, production requirements and operational priorities
  • Lead by example and act as an ambassador for our brand through strong leadership, teamwork, reliability and a positive attitude

Job Requirements

Requirements. 


 

  • Proven experience in a senior baker or Head Baker role within a high-quality, high-volume bakery or restaurant environment
  • Strong knowledge of dough making, fermentation, proving and bread production
  • Previous experience leading, training and managing a bakery team
  • Comfortable managing a team operating across early morning, day and night shifts
  • Strong understanding of food safety, hygiene and HACCP procedures
  • Good organisational skills with the ability to plan and manage daily production schedules
  • Experience with stock management, ordering, wastage and cost control
  • Ability to maintain consistent quality and standards in a fast-paced environment
  • Strong communication and leadership skills with a positive team spirit
  • Reliable, organised and able to take ownership and accountability for the bakery operation
