Job Description

The Head Baker owns Jean's entire bread and pastry programme, from mix to bake to case. You'll set the standard for every loaf that leaves the kitchen, lead a small baking team, and help build the bakery's culture and craft from opening day.

Own daily bread production end to end, within the site's 3-deck oven capacity
Lead, train, and schedule the baking team, including the Assistant Baker and Patisserie
Maintain consistency, quality, and presentation across all bread lines
Work with the founder on ingredient sourcing, prioritising local, high-quality, and seasonal suppliers
Plan production around Jean's three daily rushes
Monitor waste, yield, and cost of goods; feed into margin and GP tracking with the accountant
Uphold food safety, hygiene, and EHO compliance standards
Contribute to recipe development

Job Requirements

Significant experience as a Head Baker or Senior Baker in a respected artisan bakery
Deep technical knowledge of naturally fermented bread and enriched doughs
Comfort with early starts and physically hands-on production work
A track record training and developing a small team
Genuine care for ingredients, provenance, and consistency
Full right to work in the UK
