Job Description

The General Manager owns Jean's day-to-day floor operations, ensuring every one of the three daily sessions — breakfast, lunch, and light evening bites — runs smoothly, warmly, and to standard. You'll lead the front-of-house team, manage costs and labour, and be the guest-facing heartbeat of the bakery.

Key Responsibilities

Manage all front-of-house operational functions, ensuring standards and compliance across service
Recruit, train, and lead the FOH team, including staggered shift scheduling across the day's three rushes
Own labour scheduling and cost control in line with staff-cost targets
Maintain guest experience standards across coffee, wine, and retail service
Manage day-to-day supplier relationships for FOH consumables and the in-house larder retail offer
Support delivery of P&L targets — GP, margin, and labour — in partnership with the founder and accountant
Ensure food safety, licensing, and EHO compliance across the floor
Act as the primary point of contact for guests, building the bakery's reputation as a genuine neighbourhood hub
Some evenings required for chef series, special events, and buy-outs

Job Requirements

Proven management experience in an independent café, bakery, or restaurant environment
Strong grip on cost, labour, and inventory management
Warm, hands-on leadership style — comfortable on the floor, not just behind the numbers
Experience training and developing a small FOH team
