About Thrift Taco
We’re an independent East London kitchen cooking bold, high-quality tacos using proper technique and great British ingredients. Since launching in March 2025, we’ve cooked across market stalls, pop-ups, and residencies, including Hoxton Street Market, Chatsworth Road, Doña in Stoke Newington, and a pub residency at Howl at the Moon in Hoxton.
We focus on flavour, consistency, and doing things the right way, using techniques like fermentation, smoking, sous vide, and confit to build a tight, flavour-driven menu. Our work has been featured by outlets including Food Network UK, London On The Inside, Hot Dinners, and London Popups.
We now operate out of a small pub kitchen in Hoxton, serving food designed for pints, sharing, and late nights, and we’re in the process of opening a second location focused on high-quality tacos.
Workplace Culture
We’re a small, tight team working in a fast-paced pub kitchen where standards are high and everyone pulls their weight. It’s hands-on, collaborative, and straightforward. We take the food seriously but not ourselves, and we’re building something from the ground up, so there’s real ownership and room to grow.
Our motto is “Are you still having fun?” and it genuinely guides how we work. We believe in everyone learning, improving, and picking up new skills across the kitchen. The culture is led by Bryn, who brings decades of hospitality experience, and Jillian, who has a track record of building and leading high-performing teams in the music and fashion industries.
