Tacos Padre is an independent Mexican taqueria in the heart of London's Borough Market. Every day, we serve hundreds of customers, bringing together great ingredients, proper Mexican cooking and warm hospitality in one of London's busiest food destinations.

We're looking for a commercially minded, hands-on General Manager to lead our Borough Market operation.

You'll own the day-to-day performance of a high-volume, counter-service business, develop a brilliant team and work directly with the founders to make Padre even better.

We're looking for someone who knows how to lead a busy Saturday service, understands the numbers behind a successful food business and loves helping people grow.

£45,000 salary + up to 10% performance bonus.

Job Requirements

MUST HAVE: - Proven experience leading a busy, high-volume QSR, fast-casual, takeaway or counter-service food business.
- A hands-on operator who can lead from the front, keep service moving and maintain exceptional standards under pressure.
- Strong commercial understanding, with experience managing labour budgets, food costs, stock, waste and site performance.
- Ability to work on-site at Borough Market, London, for 45 hours across five days, including weekends.

- A natural people leader who loves coaching, developing talent and creating a positive, accountable team culture.
- Genuine passion for great food, brilliant ingredients and warm, memorable hospitality.
- An entrepreneurial mindset, with the initiative and curiosity to challenge how things are done and find better ways of working.
- Familiarity with Lightspeed, MarketMan, Deputy or similar systems.
