About Twelve Triangles

We are an independent bakery in Edinburgh specialising in slowly fermented pastries and sourdough, we started with one shop and a very small range of 2 breads, 2 pastries and doughnuts. We now have 8 shops and one main central bakery and savoury kitchen we try and have each shop slightly different to help service the community of the area its in. Our newest shop is a deli and provisions store ( originally it was meant to be a restaurant but just after we signed the lease covid started which means we had to rethink our plans. We focus on using locally sourced ingredients from small scale producers wherever possible. We work with multiple small indecent mills in the uk to source our flour. We used uk cultured butter in our pastries and work with local butchers and farmers for seasonal fruits and any meat we use or sell.
