Hinterland highlights the relationships we make with farmers, specialty purveyors, independent wine growers, small importers and other small food businesses in our tight, local network. Our low-intervention wine program and our sharing-plates dinner concept is a reflection of this care through and through. Hinterland is a reflection of the old European idea of the "Land House", inviting guests to take refuge from the hustle and bustle of the city and reconnect to the land and seasons.
