About us

 

Ask for Janice is a laid-back bar and restaurant with an emphasis on local, fresh produce, foraged greens and cocktails, craft beers, unfiltered wine, and perfect serve gin and tonics. We’re located opposite Smithfield Market and right next to the Barbican and Farringdon.

We are open from morning to evening, and our food is innovative and honest with a huge focus on flavour, seasonality and provenance. The evening menu is designed for sharing. Small plates include steak on bone marrow toast, hake with yellow pea dahl and ox check, white beans, and wild garlic kimchi.

Role description

We’re looking for an ambitious and enthusiastic Sous Chef who cares about quality food, great suppliers and creativity in the kitchen to join our team.

Responsibilities

To assist your Head Chef in delivering remarkable food to your guests while ensuring the safe operation and profitability of your kitchen.

People – With your Head Chef, take responsibility for the recruitment, onboarding, training, leadership and performance management of the kitchen team in a positive and proactive way.

Product – Assist your Head Chef in ensuring the consistency, quality and innovativeness of all food products in your venue.

Place – With your Head Chef & GM, ensure the operational and legal compliance, cleanliness & maintenance of your kitchen.

Profit - Ownership of your venue’s food GP, BOH budget management, food sales driving, product costing & BOH labour spend.

Ideal candidate

  • You’re positive, you care, you’re self-motivated and you want to be part of a team. 
  • You’re passionate about great food and have genuine desire to learn about your ingredients and suppliers.
  • Success to us is quality and consistency – you need to believe this too.
  • You have at least 2 years-experience in a busy kitchen, cooking fresh food to an excellent level.
  • You have the legal right to work in the UK and a good grasp of English.

Desired experience/skills

  • We’re looking for an ambitious and enthusiastic Sous Chef who cares about quality food, great suppliers and creativity in the kitchen to join our team and has the following experience/skills
  • 2 years at Sous or Head Chef level in London.
  • In-depth knowledge of the preparation and service of quality, seasonal, interesting food.
  • Proven background in GP management, menu costing and labour cost control.
  • Experience in BOH compliance & operation protocols – food safety, kitchen diary and GP reporting.
  • Clear, fast communicator in written and spoken English.
  • Confident and skilled in fresh food preparation.
  • Numerate.
  • Computer literacy and software fluency (WBO, Excel, Email, Kitchen Cut, Word)
