Full-time Kitchen/BoH: Sous Chef

About us

The Orchard is a neighbourhood restaurant. We have been open since 2009 and have established ourselves a reputation for high quality dishes made from fresh, seasonal ingredients and served in a relaxed and friendly atmosphere. The menu takes inspiration from many diverse influences, we always like to push ourselves forward creatively, bring new flavours to our customers and don’t restrict ourselves to one particular cuisine. The restaurant is based in Brockley SE4, an affluent and friendly part of South East London with excellent transport links.

Our out-going Sous Chef has been with us for 7 years and our Head Chef for 8 years. We place great emphasis on a healthy, nurturing environment for our staff, where they are treated with respect whatever their position and background, they are able to contribute creatively to the menu and all opinions are listened to. We take pride in having a happy, motivated and loyal team who stay with us for many years.

Role description

We are looking to bring someone onto the team to support our Head Chef, to produce fantastic food and maintain our reputation. The right person must share our ethics and values; first and foremost our love of food and hospitality, our belief in balancing hard work and commitment with a positive workplace atmosphere, being part of a small, friendly and supportive team and within a restaurant that puts the well-being of the staff and the happiness of the customer at the very centre of what they do.

The role itself requires an ability to run service smoothly and efficiently while working closely with the FOH team, oversee and manage a small team and contribute creatively to an ever changing menu . You will do this alongside, and with the support of, the Head Chef and the owners.

The position is for 48 hours a week, and that means 48 hours. We don't agree with excessive, unpaid overtime and believe that the time you have off work is just that, time off. We work from an open plan kitchen so you can see the restaurant floor, communicate easily with the FOH team and see the world outside. We have 60 covers and are open seven days a week serving brunch, lunch and dinner.

Responsibilities

The role requires you to be able to:

- run service calmly and confidently

- be able to lead, inspire and motivate a small team alongside the Head Chef

- support the Head Chef with developing new seasonal menus every 3 months alongside weekly changing specials

- continue to uphold our high standards of food safety & hygiene (consistently 5/5)

- have a good understanding of stock management, wastage and margins

- work alongside our friendly & experienced FOH team to deliver the best overall experience to our customers

Ideal candidate

It's really important to us that we find the right person; one who understands our vision and wants to be part of a team which works harmoniously. We are looking for someone who wants to enjoy coming to work, who wants to learn and grow but who doesn't want to work 60 hours a week in the process.

The ideal candidate will join us in our passion for preparing and serving flavourful, dynamic dishes from a broad influence of cuisines. They will enjoy and flourish working in a small, close knit team out of an open plan kitchen that is incredibly productive for it's size. They will understand the huge work/life balance benefits of working for a company that puts the welfare of the staff and the customer at the very centre of what it does.

Desired experience/skills

The following attributes are essential:

- Experience of cooking in a busy kitchen and working closely with a FOH team.

- Being able to support the Head Chef in running a motivated, productive and happy team.

- Enthusiasm for serving dishes made from seasonal ingredients from carefully sourced suppliers.

- An excellent level of spoken and written English

- A sense of humour

Perks, incentives or benefits offered

We offer a yearly staff bonus, 40% staff discount (which is also valid at our sister cocktail bar just down the road), staff meal vouchers, training, pension, staff meals & unlimited Caravan coffee on shift. We close on Christmas Day, Boxing Day & New Years Day and have 2 staff parties per year.

If you decide to join the team, we will look after you, train you, develop you and make you a better chef. You'll work with amazing ingredients and fantastic people and realise that job satisfaction, a great salary and a happy work / life balance is absolutely possible.
