St. JOHN Smithfield

The first St. JOHN Restaurant in London's Smithfield was opened in 1994.  Housed in an old bacon smokehouse, co-founders Trevor Gulliver and Fergus Henderson did little to the space other than whitewash the walls.  In the twenty years and more that followed, St. JOHN has become an institution, much lauded for its pared back aesthetic and a simplicity which was shocking at the time, with Fergus Henderson hailed as the godfather of modern British cookery. 

Role description

St. JOHN Restaurant's General Manager, Rebecca McGauley-Dyke,, is looking for an experienced full time member of staff to join her fantastic team. Working an accommodating 35-40 hour week, the candidate will be welcomed in to the extremely busy and very rewarding world of the St. JOHN family!

Fergus calls the front-of-house team 'sentinels of joy' and one of the most rewarding aspects of working for St. JOHN is the passion and enjoyment of our guests. Staff don their white jackets with pride knowing that they are an iconic and vital part of that enjoyment - to the many beloved regulars, to the visitors who come from overseas to make a St. JOHN pilgrimage, and to the happy locals which are so much a part of the St. JOHN community. 


The candidate will be responsible for:

  • Serving customers to the highest standard
  • Section maintenance
  • Setting up the restaurant and ensuring everything is spotless before services
  • Making coffees for the restaurant
  • Taking and handling payments
  • Maintaining excellent knowledge of the menu and wine list
  • Ensuring that customers have the best possible St. JOHN experience

Ideal candidate

The ideal candidate should have:

  • A good knowledge of St. JOHN and an affinity with the philosophy of the restaurant.
  • A strong interest in food and the restaurant industry
  • A warm personality who is keen to chat to regulars and new guests alike
  • Energy and enthusiasm 
  • Strong desire to work as part of a team
  • Experience in a busy restaurant environment
  • A strong focus on customer service
  • Focus on cleanliness and hygiene

Desired experience/skills

The candidate should have:

  • Minimum of two years within the service industry, in a similar role

The discount is great across the restaurants, with 50% off food Monday to Wednesday for tables of up to 4, and 25% off food Thursday to Sunday. Wine is charged at takeaway price when you drink in (so you can drink a £90 bottle of wine over dinner for around £25!) and at cost price to take away.

There are regular, in-depth wine tasting/training sessions to further your knowledge as well as off-site supplier visits to cider makers, breweries, distilleries and more.
