About us

Kitchenette Karts is a social enterprise food truck based at Spitalfields Market. We trade Monday-Friday lunch times serving a Vietnamese street food menu.

Our food truck training programme supports young adult prison-leavers to launch careers in the food industry or set up their own food business. We achieve this through a tried-and-tested combination of real work experience in our food truck, stages with our partner restaurants and mentorship from our charity partner Switchback.

Over the course of 12 weeks, trainees learn the essential skills needed to run a food business first-hand including prepping & cooking; front of house; operations & logistics; costings & GP and how to write a business plan.

 

Role description

As we grow and expand our food truck training programme at Spitalfields Market, we are looking for a Culinary Director to help develop and deliver London’s best hospitality training and development programme for disadvantaged young people, including prison leavers.

 

 

Responsibilities

  • Develop and deliver London’s best hospitality training and development programme for disadvantaged young people, including prison leavers. You’ll lead on the design and delivery of our teaching curriculum, inspiring young people about great produce, cooking techniques, food entrepreneurship, hard graft and creativity, giving them engaging, inspiring and useful learning experiences, delivered in the hands-on method of coaching and teaching while on-the-job delivering food prep, service and events, and in regular catch-ups and teaching events. 

 

  • Design our menus and set the standard so that we are delicious, credible and living our own values. You’ll establish menus for all our catering, street food menu and pop-ups that are exciting for trainees’ development, delicious and hit GP (across staff and COS).

 

  • Grow the commercial arm of our business. Using a mix of relationships with possible market partners and catering opportunities, you’ll lead and develop a longlist of potential opportunities for growing the commercial side of what we do.

 

  • Manage the overall food operations for the organisation. You’ll manage and motivate all the staff on the food operation, taking responsibility for their happiness, development and wellbeing, and helping to recruit and retain a happy, kind, passionate team who love food and do it for the right reasons.

 

Ideal candidate

  • Several years of experience working and leading in a busy kitchen environment.
  • A love for food and ability to transfer this onto others.
  • Comfortable designing menus for our street food operation and events.
  • Pride in developing and delivering a training programme.
  • Interest in social change.
