Role description

Farm Girl have an exciting opportunity for a full time Executive Chef to join our team. We are looking for an enthusiastic and hard-working candidate with an interest into healthy and nutritious food and wants to grow with us as a company. 

Responsibilities

  • Ensure the quality of food in terms of taste & presentation meets the high standards of consistency expected by Farm Girl.
  • This includes standardising recipes so they are the consistent across each site and making sure recipe books (for both menu dishes and prep) are up to date and followed. This will include training when necessary.
  • Ensure costs (ingredients, suppliers and portion size) are consistent across each site to maximise GP margins without compromising quality.
  • Ensure with the head chefs waste management is being recorded accurately and regularly on google sheets with a value and included in all GP margin calculations.
  • Look at ways to improve margins by tweaking recipes so long as quality and wellness are not compromised. 
  • Manage catercost (or any other platform used) accordingly so that ingredient prices are up to date as well as captured particularly when menus are seasonally updated.
  • Use catercost (or any other platform used) not only for stock counts but also for costings of all dishes/drinks.
  • With the approval of the CFO maximise the use of the same suppliers across each site to lower cost of stock.
  • Communicating any new recipes, strategies and policies to all head chefs.
  • Overseeing menu training within each site alongside the head chefs.
  • Fostering BOH employee alignment with company ethos, values and goals.
  • Researching, creating and developing new recipes.
  • Implementing new menus in Nov & May every year.
  • Assisting head chefs with staff training and health & safety tasks and procedures.
  • Making sure chefs have their level 2’s, if not organise via HR and make sure they are undertaken accordingly.
  • Make sure chefs are aware of the allergens for the dishes via training/allergen table. Update the allergen sheet when necessary.
  • Evaluating kitchen staff performance and team morale.
  • Assess whether BOH teams are adequate to meet the number of covers and still maintain a high quality of food & service.
  • Assist with any events or projects.
  • Assist with hiring and interview process for certain BOH staff.
  • Ensure with the head chef high standards of hygiene and safety in the kitchen are being maintained, recorded and followed meeting regulations.
  • Provide cover if needed during absence and leave of BOH staff.

Ideal candidate

We are looking for an enthusiastic and hard-working candidate who has experience in managing a restaurant kitchen and is familiar and interested in creating healthy dishes.. A certain skill set is required, however we value motivation and loyalty more. A candidate who is not afraid to put forward new idea's regarding the menu, events and etc. 

Desired experience/skills

  • At least 3 years experience in a senior kitchen position. 
  • An excellent standard of cooking skills. 
  • Ability to manage different kitchens on different locations 
  • Experience of food costing. 
  • Food Safety Level 2
  • Experience in creating new food menu's.
