The venue will have a gorgeous architect designed open country style bakery where we will be creating beautiful, rustic, floral and fruit, modern aesthetic cakes and sweets! We are looking for people with a good eye for design and composition, who are interested in a huge opportunity to be part of something new and cool. Hours will be decent and we will not be mass producing like a commercial bakery but will just make enough for the space for the day and focus on high quality ingredients, complex unique flavours and making beautiful looking cakes!

Mama Fuego is a series of architecturally designed spaces, inspired by the playfulness, glamour and warmth of design in the 1960's and 70's. Featuring a formal restaurant, a milk-bar cafe, a full-service bakery with unique-to-Mama Fuego daily made bakes, riverside garden and barbecue, & exclusive drinking dens including a gin distillery and tap room bar. Located within the dynamic new Greenwich Peninsula neighbourhood right beside The Tide, an elevated walkway and garden designed by the designers of the NYC High Line and featuring a running track and sculpture walk featuring works by the likes of Damien Hirst.
Mama Fuego is brought to you by Banksia & co - the team behind Covent Garden's 'Abuelo'. We aim to create emotive experiences for every person who steps through the doors, using memorable architectural design, fresh and unique food styling, and distinct personalities & atmospheres for each space.
The role is that of a baker who will work with a team, and who will be responsible for running the organisation and production in the bakery kitchen. We have an executive pastry chef and a head chef who the lead baker will work with regarding recipes, styling, ordering etc. It is a collaborative and creative atmosphere with plenty of opportunity to shine and be supported upwards in your career.
We have a gorgeous open plan bakery kitchen styled like a country kitchen (no stainless steel, all stone, timber - VERY cute and spacious) with all the equipment and space one could ask for (really a dream kitchen!). As architects we really care about creating fabulous usable spaces for our staff and customers to enjoy. This bakery will be visible to the customers and the bakers will be responsible for producing enough baked goods to put on a bakery display both downstairs and in the bakery upstairs.
We are working with an amazing executive chef to develop a core product range, the bakery team will work with her to realise these concepts - we will have an amazing range of products that are totally unique to us inspired by our tropical roots, and focuses on quality, seasonal produce, and a modern unique design aesthetic.
This candidate must be confident that they can manage a kitchen, and produce the style, quality and quantity for stocking a 200 cover restaurant.
