About us

Mandy Yin is one of the few Malaysian chef/owners in the UK, having founded Sambal Shiok in London in 2013. She is a Malaysian-born Chinese of Peranakan Nyonya heritage.

 "I take inspiration from everything I ate in my childhood growing up in Kuala Lumpur Malaysia. Then I mix it up and put a new slant on it."

​Sambal Shiok started trading at street food markets in 2013. Listening to customer demand led to Mandy narrowing her focus on laksa and starting a pop-up restaurant. Her pop up laksa bar had sell out runs across London before she opened Sambal Shiok Laksa Bar in Highbury in June 2018 to widespread critical acclaim.

We showcase the diversity of Malaysian cuisine in vibrant surroundings with exemplary service. With unique yet accessible food, creative drinks and friendly, informed service, we strive to be THE Malaysian destination restaurant in London.

Our menu centres on our signature Nyonya curry laksa, fully customisable including using an untraditional vegan broth. We also have carefully curated snacks and rice dishes which rotate every few weeks, or whenever we feel like it. You will find and learn about a huge variety of South-East Asian ingredients in our kitchen such as shrimp paste, dried shrimp, lemongrass, kaffir limes leaves, pandan.

Our primary focus is on taste. We also believe in quality not quantity when it comes to how we work and what we produce. We aim to make as much as possible ourselves in-house, like our sauces, spice pastes, pickles, crackers. 

Mandy's mission is to introduce as many people as possible to Malaysian flavours. Most of our menu is vegan/vegetarian, and we choose to only use halal meat because being Malaysian, she wants to serve everyone and be welcoming to everyone. Food is the greatest unifier.

Role description

We are hiring a full time Floor Supervisor for our front of house team with immediate start.

You will join a solid, well-functioning, efficient team. We are proud to have very low turnover of core staff. Our current Floor Supervisor is leaving us to start a university course as a mature student.

Responsibilities

  • Have full knowledge of the brand, kitchen, food prep and service as you will be the Head Chef/Owner's ambassador on the floor
  • Running and overseeing service, to optimise covers and smooth delivery
  • Developing, motivating and training the Front of House team to ensure they provide excellent service, able to speak about the food passionately in order to help guests with their menu choices and to up-sell
  • Creating a positive atmosphere and restaurant for guests and staff
  • Deliver excellent customer service by building rapport and responding to guests' feedback with empathy and generosity
  • Overseeing opening and closing procedures
  • Managing all back office paperwork - FOH rotas, ordering drinks stock, email enquiries
  • Maintaining high standards of quality control, hygiene, and health and safety

Ideal candidate

The most important quality to us is a can-do, positive attitude! Enthusiasm for spicy Asian cuisine is definitely a bonus.

Desired experience/skills

Experience as a supervisor or senior waiter/waitress would be preferred. This role would suit someone who is looking to take on responsibility within an exciting, dynamic team.
