About us

Mathew started The Cheese Truck in early 2014 to celebrate and promote all that is great about British cheese.

From humble beginnings at Maltby Street Market, to becoming a regular fixture on the UK festival circuit, we made a name for ourselves serving some of Britain’s best grilled cheese sandwiches from our iconic classic Bedford vans: Archie, Alfie & Audrey.

We’ve conquered the fields of Glastonbury, starred in Hollywood Movies and travelled as far as Istanbul and Dubai, selling half a million sandwiches & amassing a passionate following on our mission to rejuvenate British cheese.

In 2016, we decided it was time to make the jump to bricks and mortar. We reached our crowdfunding target in less than a week, and opened our flagship Camden restaurant the following year.

Camden has been our biggest challenge yet. We haven’t always got things right, but our small, dedicated team have managed to keep the doors open, seven days a week, for the past two years.

Our aim is to share our food with as many people as possible, whilst informally educating our customers on how great British produce can be.

The price of our dishes fairly reflect the quality of their ingredients, as well as the time and energy it’s taken to get them to your plate. That being said, we’ll always keep our food affordable and accessible.

We want everyone to embrace it, and be part of our British cheese revolution!

Role description

The Cheese Bar will be opening its second site in Covent Garden late August/early September. The concept will be very different to our offering in Camden, the focus will be on cheese plates and wine, pairing British cheeses with unique chef led pairings. Think Coolea with hazelnut brittle, Beauvale with a sticky pear jam, Alpine style cheeses with Almond Fudge. 

We're looking for a dynamic and creative Pastry Sous Chef and Pastry CDP's to support our head chef Fulvio in this site, working in a small and creative team to come up with interesting and exciting pairings to our best of British Cheese. We'll also be offering desserts made in house and featuring the same great cheeses.  

A similar concept to this would be Casellula in New York, opened and run by 2 very well-known American Chefs:

Working alongside our in-house cheesemongers, who will be able to support the kitchen. We'll be offering lots of in house training on cheeses including industry recognised qualifications through the Academy of Cheese.


Assisting the head chef in the following areas:

- Management and implementation of costings, recipes and suppliers. 

- Recruiting and motivating a team.

- Running service and training kitchen team on dishes. 



Ideal candidate

A strong knowledge of flavours and palate, with previous experience working as a pastry chef in a good calibre of restaurant.

Understanding of London restaurant scene, seasonality and British produce. 

Creative, driven and passionate with the ability to manage and motivate a team. 

An awareness of British Cheese with an interest to learn and develop a deeper understanding of it. 

Excellent work ethic, organisation and communication skills. 

Friendly, approachable and humble.
